- Our food choices matter – for our health, and the environment. Adopting a more plant-based diet is one of the single most impactful individual actions you can take against climate change. The key is ‘more plant-based’ because the reality in western cultures is that we are not all going to be vegans. Eating less meat and dairy (particularly beef and lamb) will make a big difference in emissions if many people become informed and take action. What we eat matters!

PLANTIFUL RECIPES
Newfoundland Field Cookies
(Cut this recipe in half or… bake half & freeze rest of dough for next week?)
FIRST BOWL:
1.5 cups of your favourite flour
3/4 cup each of: Rolled Oats, & Sunflower Seeds, & Chocolate Chips
1/2 cup each of: Raisins, and ground Flax Seeds
1/4 cup each of: Sesame Seeds & Poppy Seeds & Pumpkin Seeds & Coconut
1 tsp of: Baking Soda & Baking Powder
1/2 tsp of: Salt
SECOND BOWL:
1 cup of: Brown Sugar or less
3/4 cup of: Butter
1 Egg
1/2 tsp Vanilla
Directions:
- Mix First bowl
- Mix Second bowl
- Add together, combine well.
- Roll into balls.
- Drop on cookie sheet lined with parchment paper
- Flatten with a fork
- Bake at 350 degrees for 12 minutes
Easy Thai Nut Noodle Bowl (4 people)
Thai nut sauce: (make quickly in a food processor or blender)
-1 large clove of garlic
-2 tbs sesame oil
-3 tbs smooth almond or peanut or any nut butter
–2 tsp grate fresh ginger (opt)
-3 tbs lemon or lime juice
-2-3 tbs tamari (natural soy sauce)
-1 tsp sugar (opt)
In the bowl:
- Either cooked rice or rice noodles
- A mix of veggies such as : edamame (a cup or more)
1 pepper diced (not a hot one!)
Small cucumber diced,
4 green onions diced (opt)
A carrot julienned
Whatever is in your fridge.
Topping:
-Cilantro leaves, chopped and sesame seeds!
Lazy Homemade Veggi Burgers so, so many
2 cup oats
1 cup black beans, rinsed
Some almond flour (or your choice)
Carmelized onions &
Sautéed onions & mushrooms & carrots
Roasted garlic (purchase or roast yourself)
1 -2 eggs
Olive oil
Fresh rosemary? Opt.
S&P
Throw it all in a food processor
Makes many burgers. Freeze them for use when needed!

Sloppy Fun Enchiladas! For 4
Prep time: 15 min
Bake: 45 min (optional)
Basically: Sauté a chopped onion, then add a lot of veggies, chopped finely. Stir in black beans and salsa or tomato sauce and top with grated cheese! Eat right then, or bake with extra sauce (below & above) and extra cheese.
1. Sauté :
1 c chopped onion
In 2 Tbs olive oil, warmed
Add 1 red sweet pepper, chopped
1 small head of cauliflower or a bunch of broccoli, chopped small
1tsp cumin
¼ tsp cinnamon
Corn or peas for fun (opt)
Zucchini chopped up (opt)
5 cups baby spinach to throw in and stir fry briefly at the end
2. Add spices and spinach, stir. 1 min.
3. Dump veggies into a mixing bowl and add :
1 c black beans, rinsed
(possibly mashed)
4. CHOICE:
Either stuff a wrap or a taco shell with that fun mix and sprinkle salsa or tomato sauce on top, then cheese —- or do that and bake it for 15-20 min at 350-400 degrees. If baking, spread some sauce below and across all the top of these cute rolled up enchiladas, with grated cheese over top. 30 min.
